To celebrate apple season, I thought the girls and I would make apple strudel. This recipe is from my friend Steph @ Pendants by Steph. She made hers with Asian pearls (aka apple pears) picked from a tree (lucky girl!) but we made ours with different types of apples as well as pears. When she shared her recipe on her personal blog, I knew it was something my girls would enjoy making, and eating of course.
There aren’t too many ingredients to make this easy dessert. To make two strudels: Apples and pears (about 4-5), a pack of puff pastry (one box contains two sheets), cinnamon and brown sugar/granulated sugar, plus an egg for egg wash. The amount of sugar you use depends on how sweet you like things, plus how sweet your fruit is, so give your fruit a taste. This time, I used about 1/2 cup of brown sugar and a few tablespoons of cinnamon, plus a sprinkle of granulated sugar. Preheat your oven to 350 degrees F.
Peel, cut and core your apples/pears. Lay out your puff pastry with some flour and roll it out.
You can either add the sugar and cinnamon to a separate bowl and mix with the apples, or just do it right on the puff pastry (one less bowl to wash).
Brush the egg wash (one beaten egg with a little water) along the edges.
Then fold over the puff pastry so it almost meets the other edge, and fold the bottom edge over the top edge and pinch closed. Brush more egg wash on top. Bake at 350 degrees F for 30-40 minutes…
…or until your little chefs start yelling “IT’S GOLDEN BROWN, MAMA! IT’S GOLDEN BROWN!”
Serve with a dollop whipped cream or ice cream.
